ABOUT HERO DOUGHNUTS

Begun as a “pop-up” concept that utilized a shared commercial kitchen, HeroDoughnuts has grown up to become a favorite stop for breakfast, lunch and afternoon snacks in their cheery Homewood, Alabama shop. Brioche—yeast-style, raised doughnuts are made from scratch in a 2-day process, then topped and filled with creative combinations utilizing locally sourced ingredients. Glazed, filled and sanded with unique sugar and spice mixes, Hero’s sweet treats—including house-made frozen custard—are offered along with breakfast sandwiches and their cult-favorite hamburger on a brioche bun

WILL DRAKE

Will Drake, Georgia native and Birmingham, Alabama resident, is the creative and technical mind behind Hero Doughnuts. Drake began working in a Starbuck’s Coffee while attending Samford University in Birmingham where he received a degree in nutrition. At the same time, Will was playing drums with a traveling rock band and the exercise of creativity coupled with discipline played nicely with Will’s ability to set his mind to various pursuits. Setting his focus on a culinary career, Will has worked as a baker and cake decorator, hustled in a busy BBQ restaurant, flipped burgers with celebrity chef Richard Blais, and prepared nutritious meals for those suffering from eating disorders. He spent a few months in Ireland learning the art of whole animal butchery and returned to Alabama where he returned to his love of baking bread and pastries. Hero Doughnuts was a passion project that started as a“pop-up” concept. The irregularity of the schedule and low overhead model allowed Will to work on his techniques and flavor profiles. Partnering with friend and photographer, Jason Wallis, they teamed up with The Pihakis Restaurant Group and opened their first Hero Doughnuts Shop in Homewood, Alabama in 2017.
